I am on vacation in Bath Maine at my Uncles cottages, Rockhaven Cottages. They are water front and today my Husband and uncle went out fishing and stopped a lobster boat and bought a bunch of fresh lobsters. I was so looking forward to fresh seafood, we live in Mass and don't get fresh seafood like here. My parents are staying with us and my father wanted baked stuffed lobster. So I went on online and learned how it was prepared and cooked. Then my father, son and I made it together. I didn't have all the ingredients so I made up my own recipe it came out great. Prepare the lobster for baked stuffed lobster, boil the claws until they float separately in water. Meanwhile I toasted 9 pieces of bread for breadcrumbs then pulsed them in a blender to make bread crumbs. Melt 2 sticks of butter add one onion and three cloves of garlic finely chopped. Chop 3 stalks of celery add to the butter when melted and saute till translucent. Add salt and pepper, basil and rosemary about 1/2 teaspoon each. Add about 1/2 cup of pinot grigio, reduce it by boiling for 2-3 minutes. Then stir in the bread crumbs. Crumbs will be moist but not soggy.
When the claws float to the top of water they are done. Remove lobster meat and place in the cavity of prepared lobster, top with stuffing and put about 3 teaspoons of butter in small pieces on top of lobster. Place in oven at 375 for 30 minutes. Enjoy!
