Heirloom Tomato Salad with Grilled Garlic Bread Recipe
I just tried this recipe it is so good, for a little more summer twist I added some watermelon chunks. Of course you can leave that out, but i really did enjoy the addition.
Try this you will love it you could also add some grilled chicken, steak whatever you feel like. So go ahead, get crazy and get your creative juices flowing.


* Active Time: 10 minutes
* Total Time: 30 minutes

Recipe Ingredients

o 1 medium red onion, very thinly sliced, separated into rings
o 1⁄4 cup white balsamic vinegar
o 4 oz feta cheese, crumbled
o 3 lb mixed heirloom tomatoes, cut into chunks
o 1⁄4 cup plus 1⁄2 tsp extra-virgin olive oil
o 1⁄4 tsp each salt and freshly ground pepper
o 1⁄2 cup torn fresh basil leaves
o 8 slices (1 in. thick) from a round loaf of semolina bread
o 1 large garlic clove, peeled and halved crosswise

Recipe Preparation

1. In a large serving bowl, combine onion, vinegar and feta cheese. Let stand until onions have softened, about 10 minutes. Meanwhile, heat grill.

2. Add tomatoes, 1⁄4 cup oil, salt, pepper and basil to onion mixture; toss.

3. Brush bread slices with 1⁄2 tsp oil and grill until lightly toasted. Spear garlic clove halves onto end of fork and immediately rub over hot bread slices. Serve with tomato salad.
