Bruschetta with Tomato, Basil & Feta

 I think Bruschetta is one of the best appetizers.  It is easy to prepare, you can prepare it in numerous ways with vegi's, fruit, cheese whatever you feel like creating.  I made this version tonight and it was so good.

6 Plum tomatoes chopped in small cubes
1/2 a small red onion finely chopped
1 large clove of garlic chopped
6-8 basil leaves chopped roughly
2 tsp of olive oil
2 tsp of red wine vinegar
juice of 1 lemon
1 loaf of french bread baguette
3 tbsp of feta crumbles

Mix all the ingredients together for the bruschetta
slice the bread in 1/2 inch  slices and lay on a baking sheet
sprinkle the top of bread with olive oil genoursly
sprinkle garlic powder on top of oiled bread
either toast bread in oven or on the grill to golden brown

Spoon bruschetta on top of bread and eat immediately.

I grilled it a little too long but it was still awesome.
