Panzanella is so easy to make it is moist fresh and yummilicous. It is made of day old tuscan bread. You don't have to even turn on the oven to make this recipe. The crispness comes from the onions and cucumbers. I had never had this before tonight but have heard great things about it.
1 loaf of day old tuscan bread
1 small onion sliced in half moons
3 ripe tomatoes sliced in wedges (save some for garnish later)
1/2 c of torn fresh basil (save some for garnish)
Seedless cucumber
Salt and pepper to taste
1/2 C of olive oil
3 tbsp of red wine vinegar
Put bread in large bowl and lightly soak with cold water for approximately 20 seconds. Drain water and squeeze out the water. Break up the bread with your hands, it should crumble.
Slice the onion and cucumber thinly, add on top of bread. Add the tomatoes and most of the basil on top of the bread bowl. Season with salt and pepper. Sprinkle with the olive oil and stir gently to blend. Add the red wine vinegar, salt and pepper then stir gently to blend again. Top with tomatoes and basil serve. Enjoy!!
