
This is a great soup to make when you are craving a nice hearty and soul warming soup.
Ingredients:

2 stalks celery, chopped 1 onion, chopped 3 cloves garlic, minced 2 teaspoons dried rosemary 4 slices of bacon / 2 14 1/2 oz can diced tomatoes 1/2 C red wine | salt & pepper to taste 1 (14.5 ounce) can chicken broth 1/2 cup uncooked small tube like pasta 1 (15 ounce) can cannellini beans, with liquid |
Directions:
| 1. | Cook bacon till crisp in a soup pan then remove the bacon from pan, place the bacon on a dish to the side. Cook celery, onion, garlic, carrots & onion in bacon fat until vegi's are translucent. Stir in chicken broth and wine scrape up bits on the bottom of the pan. Add rosemary and simmer about 15 to 20 minutes. |
| 2. | Add pasta and cook 10 minutes, until pasta is tender. |
| 3. | Add undrained beans and mix well. Crumble the bacon in your hands and add to the soup.Heat through. Serve with grated Parmesan cheese sprinkled on top. I like to have croutons on top of this soup. |
