Sandra's Chestnut Soup


For those of you who are up to date with my posts, you may remember that I went to a French Night at a local tavern a couple weeks ago. I stated I was going to try to make the chestnut soup I had that night. I finally got to it tonight, I was able to get my hands on some chestnuts that were already peeled and roasted so that was a time saver for me. First put 4 slices of bacon in a sauce pan and cook the bacon till crispy. Remove the bacon and set to the side for later. Chop up a leek then saute in the bacon fat until translucent a few minutes. Crumble the chestnuts into fine crumbs then add to the leeks. Next use 1 cup of white wine and deglaze the cooked on bits on the bottom of the pan. Add 1 Cup of Chicken stock and 1 cup of heavy cream. In a small pan melt 2 tablespoons of butter and add a 1/2 a cup of flour stir into a rue. Heat the rue for a couple minutes to eliminate the flour taste. Add 1 Cup of Cream and stir till smooth, add to the soup pan. Heat to a slight boil then simmer on low for about ten minutes. When it is time to serve crumble the bacon into bits for a garnish.

Well it is super close to what I had that night very tasty, has a nice bacon, leek flavor with just a slight nutty taste to it. Very good and very close.
