Rhonda's Homemade Biscotti

I went to a cookie exchange at my friend Nicole's house right before Christmas. Her friend Rhonda made these biscotti's they are amazing. I like them because they are not as crunchy as the ones you get at coffee shops.


1/2 c (1 stick ) butter softened
1 c sugar
2 eggs
1 tsp vanilla extract
2 1/2 c flour
1 1/2 tsp baking powder
1/4 tsp salt
1 2/3 c (10 oz) pkg Hershey's cinnamon chips, divided
1 cup finely chopped walnuts
2 tsp shortening ( do not use butter, margarine, or oil)
White chip drizzle to follow

1. Heat oven to 325. grease a cookie sheet 2. Beat butter and sugar in large bowl until blended. Add eggs and vanilla; beat well. Stir together flour, baking powder, and salt; gradually add to butter mixture, beating until smooth. (dough will be stiff) Using a spoon or with both hands work 1 cup cinnamon chips and walnuts into the dough. 3. Divide dough into 4 equal parts. Shape each part into log about 8" long. Place on cookie sheet at least 2" apart; flatten slightly. 4. Bake 25-30 minutes or until logs are set and a wooden toothpick comes out clean. Remove from oven; let cool on cookie sheet 30 mins. Transfer to cutting board. Using a serrated knife and sawing motion, cut logs diagonally into 1/2" wide slices. Place slices close together cut side down on ungreased cookie sheet. return to oven and bake 5-6 mins. turn each slice bake an additonal 5-8 mins. remove from oven and cool slightly. Remove from cookie sheet to wire rack and cool completely. Melt remaining cinnamon chips with 2 tsp shortening, drizzle over each cookie.

White chip drizzle: Place 1/4 c white chips and 1 tsp shortening in small microwave-safe bowl and microwave for 30-45 seconds or until smooth..drizzle over cookies...Enjoy :)
