Italian Chicken Saute'


This is a total comfort food meal it will fill your house with such pleasant aromas you just wont know if you can wait to eat it or not. I started off making Chicken Alfredo then I came across this recipe and tweaked it to the ingredients I had available. I am making mine with broccoli and a crispy baguette of bread.


  • 1 14.5 oz. diced tomatoes
  • 2 Tbsp. olive oil
  • 1 lb. boneless, skinless chicken breasts cut into strips
  • 1/2 cup sweet peppers green, chopped
  • 1/2 cup chopped onion
  • 1 garlic clove minced
  • 1 cup mushrooms sliced
  • 1 cup zucchini sliced
  • 2 Tbsp. capers or broccoli
  • 1 Tbsp. fresh basil chopped or 1 tsp. dried basil leaves, crushed
  • 1/2 tsp. italian seasoning
  • 1/4 tsp. salt
  • 1/8 tsp. red pepper; red pepper flakes crushed
  • 1 Tbsp. cornstarch I like mine saucy so I skipped this step

Instructions

1. HEAT oil in large skillet. Add chicken, sweet pepper, onion and garlic; sauté 3 to 4 minutes or until chicken is lightly browned.

2. ADD mushrooms and zucchini; sauté 1 to 2 minutes or until zucchini are crisp-tender.

3. DRAIN tomatoes reserving juice in small bowl. Add tomatoes, capers, basil, Italian seasoning, salt and red pepper flakes to skillet.

4. STIR cornstarch into reserved tomato juice. Stir into mixture in skillet. Cook, stirring constantly, until liquid is thickened. Serve over hot cooked rice, if desired.
