Asian Inspired Pork Roast


I am really in the mood for Chinese food tonight except I really don't feel like going out and braving the cold. It is just frigid out there. So I have come up with a recipe that taste bit like if a Chinese restaurant were to make a pork roast this is what they would make. So full of flavors of garlic, saltiness from the soy sauce and sweet yet orange flavors from the marmalade. So Tender and juicy. Yumm!
All I have to do now is make the rice, but that is a recipe for another day :)

Ingredients:

4 pounds pork roast
1/4 cup soy sauce
1/4 cup orange marmalade
1 tablespoon ketchup
2 cloves garlic, crushed
1 tbsp of honey

Directions:

In a cast iron pot heat 1 tsp of olive oil on medium high heat. Salt and pepper roast and cook on all sides until a light medium brown crust forms. About 3-4 minutes per side. In a small bowl add all ingredients and mix. Once the roast has been seared on all sides coat with mix and put in the oven at 400 degrees for approximately 2 hours or until roast has reached desired done-ness. Every 40 minutes or so remove cover and bast to keep moist and coated with flavor.
