Almond & Panko Crusted Chicken With Gravy


This dish is so flavorful and is a great way to wow whomever you are cooking for. Not too mention really easy to make. I have had this dish in restaurants before and let me tell you it was even better I think, than theirs.

Heat oven to 400 degrees. Heat butter in an oven proof skillet, on top of the stove. Brush some of the butter onto the chicken. Dip the chicken into panko crumbs, chopped almonds, salt & pepper. Put the chicken into hot skillet and let brown on both sides for @ 5 minutes per side. Put in oven and finish cooking @ 20 min. Remove from oven, put chicken on a plate, pour about a half of cup of white wine into the pan to deglaze stuck on bits. With a slotted spoon remove most of crumbs add about 2 tsp of flour and 1/2 C of milk or cream stir until a gravy forms. Pour the gravy over the chicken and garnish with parsley.
