Mussels in a garlic, wine sauce.



You can't get much fresher than going out and getting your own mussels. My husband and son went out digging for mussels then I prepared them in a sauce. Soak and clean mussels. In a deep pan put in 2 tablespoons of garlic oil, 3 cloves of garlic chopped, one onion chopped and one tomato chopped. Heat until the Onion is cooked and translucent. Add 3 cups of wine and put mussels on top cover and heat on medium high heat till you see steam coming out from the top of pan then cook 3-5 minutes till the mussels open up.
Remove mussels then add cream to sauce stir and pour sauce over mussels bowl. Serve with crusty bread. I was told the mussels were really good and they really enjoyed the garlic and tomatoes.
