My son and I both love shrimp, usually we just eat it cocktail style. Or occasionally we will order coconut shrimp when we go out to dinner. While at the grocery store trying to figure out something different to make for lunch, we noticed that there was shrimp on sale. I have recently taken a liking to fresh lime margaritas so I wanted to try using the mix for a marinade on the grill. It was really, really good. You must try this, it is a great time of year to grill, plus you won't heat up the house or dirty any pans. Bonus! We had the shrimp over white rice.
1 pound ready to cook shrimp
2 limes juiced
1/2 c tequila
1/4 c triple sec
dash of sea salt
Marinade the shrimp 3 hours in a bowl with all the ingredients. Spray your grill with oil or Pam spray for grills. Place shrimp on the grill for 2 minutes than flip over and baste shrimp with marinade and cook for another 2 minutes or until pink.
Place over white rice and garnish with a lime and a teaspoon of chopped parsley.
