SANDY'S AWESOME CLAM CHOWDER

My now, not so secret recipe that many have tried to get from me. Now I won't be able to bribe my sister Brenda with my chowder because if she reads my blog she can make this as corn chowder and omit the clams. We shall see if she is reading this now! Ha Ha!!


6 large potatoes cut in bite size peices
1/4 pound pork rind
1 pd fresh chopped clams
1 bag frozen corn
1 pint of heavy cream
1 bottle of clam juice
1 onion chopped
2 celery stalks chopped
2 tbsp butter
water
salt & pepper to taste
1/4 Tsp. cayenne pepper

For Rue:

2 more Tbsp butter
4 Tbsp flour

In a stock pot heat butter add onion and celery and pork rind saute till translucent. Remove pork and add potatoes and cover with water. Add clam juice boil till the potatoes are just slightly hard. In a small skillet Melt butter till bubbly add flour and stir quickly heat for about 2 minutes. Add Cream and whisk till smooth add to the pan of potatoes and stir. Add the clams and cook about 5 minutes. Lower heat to low and add the corn,cayenne pepper and salt and pepper. The longer you simmer the chowder the better it will taste.
