I love day's like today! I got to spend time with family, great food and I did a little after Christmas shopping. Not to mention it was 50 degrees out in the end of December, that has to be some kinda record in New England.
Today is my little sister Jackie's 30Th birthday. Her husband had a small party for her and I was asked to bring an appetizer. I made hot asparagus dip with french bread rounds. It was so easy to make and so tasty. My sister Brenda turned her nose up at it when she asked what it was but went back many times to taste it again. The dip is creamy with a brown crunchy topping. A nice strong flavor of garlic to it and of course asparagus throughout the dip. I highly recommend making this for your next party or get-together. I am not sure how many people are reading my blog but I would love for some comments so please sign in as a follower. The recipe is as follows:
2 12 oz cans of asparagus spears (I will use fresh asparagus in the future.)
1 1/2 C of mayonnaise
1 1/2 C of freshly grated Parmesan plus some for sprinkling right before serving
2 cloves of garlic chopped
Salt and pepper to taste
Preheat oven to 350 degrees. Drain and chop asparagus. Add to remaining ingredients and mix; pour into a baking dish. Bake 25-30 minutes till bubbly and the top gets light brown. Remove from oven and sprinkle top with Parmesan cheese. Serve with hot french bread rounds lightly toasted. Or you can use bagel chips from the grocery store.
