My dinner let down at one of my favorite restaraunts.

I have gone to Viva Fresh Pasta in Northampton for a little over a year now. I am one of those people that get a dish and if I absolutely love it I tend to get that same dish every time. I do however love to try appetizers so I can get a variety of what different dishes that restaurant offers. They tend to make some of the same entree's in appetizer proportions. I usually get a couple appetizers so I can get a variety. Of course by the time my main meal arrives I am only able to eat very little... Lunch for the next day! :) I love their Sweet Potato Ravioli with the Maple sauce it is a creamy sweet sauce with a little garlic taste to it. Well, when my meal was presented to me this time there was a ton of nuts and the sauce tasted more like just maple syrup. I was told this is how it is always prepared. Hmm... I know I am aging and my memory might not be what it used to be, but that was not what I have always gotten. I decided to try and make the sauce myself, It came out very close and really good.

I bought the ravioli's from Fosters in Greenfield. For the sauce I sliced up 3 Shallots and a small red onion. Melt 1 Tbsp of butter in a pan add the shallots and red onion cook until soft and light brown, about 10 minutes, then add 1 tsp of sugar and let caramelize. Add a couple cloves of garlic and saute for 2 min. Add 1/4 c of chicken broth heat till bubbly then add 2 tbsp of maple syrup. When sauce starts to get bubbly and thicken remove from heat and add 1/4 cup of heavy cream.
Boil sweet potato ravioli's according to the package directions, drain and put in a serving dish. Pour sauce over ravioli's and top with chopped walnuts.

I enjoyed this so much I didn't even realize the sauce was spilling on my keyboard. It is now wicked sticky.
