Flank Steak with Red Wine Sauce and Beef Risotto

Tonight's Dinner was a Flank Steak with Red Wine Sauce and Beef and broccoli risotto. It was surprisingly easy to make. The sauce was thicker than I thought it would be but very good after all was said and done. Risotto is awesome if you have never tried it definitely give this a try. Makes Rice-A-Roni look like rice bologna. Ha, Ha my first blog joke.. anyhow this is considered an Italian meal and I would make it again. First slice one onion and saute on medium heat with 2 tablespoons of butter. After 5 minutes add 2 cloves of garlic minced and 1 tbsp. of fresh oregano, heat for about 2 minutes till you can smell the aromas heat through. Add 1/4 c of tomato paste and stir thoroughly for about 3 minutes. Add 1 1/2 c of red wine and whisk reduce liquid by a third. whisk 2 more tbsp of butter and 1/8 tsp of black pepper and salt to taste. Drain out the solids and save the sauce to drizzle over the steak when ready to serve. Next salt and pepper the steak and cook as desired on grill about 6 minutes per side for medium rare steak.

For the risotto, in a skillet, I took 1 tbsp of butter and 1/2 a onion chopped and saute' till tender. Add 1 clove of garlic minced and arborio rice. I used 1 c of rice and stir into the onion mixture and cook stirring constantly for about 5 min. In a sauce pan boil 3 c of beef broth. Add to broth to rice 1 cup at a time and let rice soak up the broth before adding next cup of broth. repeat till you have used all your broth, salt and pepper to taste. When adding the last cup of broth I put in 1 cup of frozen broccoli. When the last cup of broth has been soaked up by the rice it is ready to serve with your steak and wine sauce. Enjoy!! I thought the wine sauce was good but you may want to add a few red pepper flakes to it to give it a little kick.

What a great dinner, the risoto was excellent, and the steak was grilled just right, and went well with the wine sauce. I had the leftovers for lunch today, and they were just as good!
