Tonight was a night for a nice oven roasted chicken. I wanted to change it up a little so I went with an apple cider theme. The chicken came out crispy, yet juicy and tender with a citrus apple flavor. I really enjoyed the orange zest on the skin. The stuffing was so awesome one of my favorites yet.
1 6 pd chicken
6 pieces of toast cubed small
1 sm onion
1 stalk of celery
1 sm apple skinned then cubed
1 tbsp butter
1 cup apple cider
1 orange
olive oil
In a saute pan melt butter then add onion, celery and apple. Saute till translucent, salt and pepper to taste. Add bread cubes and cider stir till mixed well. Stuff the cavity of the chicken with stuffing. Place in oven proof pan, then coat the skin of the chicken with olive oil, salt and pepper. Squeeze the juice of on orange over chicken and zest the orange skin over chicken. Cook at 400 for @ 2 hours.
