Gorgonzola Stuffed Pork Chops
We decided to stay home tonight for a quite New Years Eve dinner! I wanted something that was simple to make but not simple on the taste buds. This dish was successful in both areas!
4 boneless pork chops
2 oz of Gorgonzola cheese
2 pears cored then sliced
1 tbsp of olive oil
3 sprigs of fresh rosemary
1/3 C of pistachios chopped
1/2 cup of white wine
Preheat oven to 375. Cut a pocket into the pork chops. Stuff with cheese mixed with nuts. Salt and pepper to taste. In a cast iron pan or oven proof pan heat on med. high with olive oil. Sear pork chops on both sides then add the pears and rosemary. Add wine stir and put in oven for 10-12 minutes till desired doneness. Plate and enjoy!!
