Sandra's Banana Bread

Many of you know baking is not one of my strengths.  I am in the process of trying to sell my house and I have heard before a showing, you should bake something to try make one feel the sense of homeyness when walking through the door.  Usually I have one of those tube of cookies or cinnamon buns ready to go in the oven, today however I was out.  In a panic I decided to make banana bread.  Mainly because I had all the ingredients and also because it looked pretty easy to make.  I added some nutmeg and cinnamon to this recipe and I must say it was good.  Even my Realtor said she couldn't resist it and went back for another slice.  This recipe does not have any nuts, but you could add some if you prefer.

Prep time: 5 minutes
  • Cook time: 1 hour

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1/2 teaspoon of ground fresh nutmeg
  • 1/2 teaspoon of cinnamon
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda, cinnamon, nutmeg and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
Yield: Makes one loaf.
