
Nothing says Sunday dinner like a nice Beef Roast.
Ingredients
- 3 pounds beef eye of round roast
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper
- 2 tblsp tomato paste
- 1 c red wine
- 1 tsp soy sauce
- 1 bay leaf
Directions
- Preheat oven to 375 degrees F (190 degrees C). If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, on top of 3 stalks of celery. Slice 3 cuts in the top of the roast and stuff with chopped garlic or cloves. Mix wine, paste, soy sauce together pour over the roast. Then season the roast with salt, garlic powder, and pepper. Add more or less seasonings to taste.
- Roast in oven for @90 minutes. Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.Slice thinly than top with the meat drippings.
