Tomato and Feta Salad


I am sitting on my deck writing this post when all I can think about is the sounds and smells of summer that are surrounding me. My husband is mowing the jungle of grass that has engulfed our front yard due to both, neglect and part; mother natures blame of being so hot and humid the last few weeks. Anyhow, the aroma's of the fresh cut grass and vine ripened tomatoes reminds me of summer. I am not sure if it is a bug or bird that makes this loud humming sound, I used to think the sound came from the power lines when it was extremely hot out, when I was a kid. Do you know the sound I am in reference to? I just heard it and haven't thought of it in years.
I am going to make a tomato and feta salad for dinner tonight, it is too hot to cook and eat a hot meal. I think I may also bring the same salad but with mozzarella to the Labor Day picnic Sunday.

Ingredients:

  • 2 pints cherry tomatoes
  • 1/2 pound feta cheese, crumbled (about 2 cups)
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • Salt and pepper
  • Thyme sprigs, for garnish

For a change
Replace the feta with ricotta or chopped mozzarella, and the thyme with chopped basil.

Directions:

  1. In a medium bowl, toss the tomatoes with the feta. Drizzle with the olive oil and balsamic vinegar. Season to taste with salt and pepper and toss. Top with the thyme.
