With an over abundance of tomatoes I decided to make homemade marinara sauce it smells so aromatic while cooking. You just cant get this flavor from a jar. Make extra and freeze the rest for a quick dinner later. 8 large tomatoes blanched in boiling water for 3 min. skins removed
3 cloves of garlic
1 onion chopped fine
10 basil leaves finely chopped
handful of parsley finely chopped
teaspoon of sugar
1 lemon squeezed
salt and pepper
bell pepper chopped
2 stalks of celery chopped
bay leaf
In a large sauce pan heat about 2 teaspoons of olive oil on medium heat
add garlic, onion, peppers and celery and cook for about 3 minutes
stir occasionally
add tomatoes and break up with your spoon into small pieces
add herbs, sugar, lemon and salt and pepper
heat through till boiling then simmer for about 20 minutes. Longer for thicker sauce. Remove bay leaf.
