Shrimp Scampi

One of the requests at the restaurant that I guest chef at is Shrimp Scampi.  I never realized how quick and easy it is to make this.  I have always thought it is a little bland so I have added a few thing to make it a little more zippy and flavorful to this recipe I found.  My son loves shrimp so he didn't mind me practicing on him to get it right. I served this over angel hair pasta.


Ingredients:
1 cup butter
2 tablespoons prepared Dijon-style
mustard
1 tablespoon fresh lemon juice
1 tablespoon chopped garlic
1 tablespoon chopped fresh parsley
1/2 C white wine
a small dash of red pepper flakes
2 pounds medium raw shrimp, shelled, & deveined.
Directions:
1. Preheat oven to 450 degrees F (230 degrees C).
2. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, red pepper flakes,and parsley. When the butter melts completely, remove from heat.
3. Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.
4. Bake in preheated oven for 12 to 15 minutes or until the shrimp are pink and opaque.
