Spinach and Mushroom Lasagna Rolls with Creamy Gorgonzola Sauce

What an unexpected night I had tonight.  I had a blonde moment and got my dates mixed up, I was planning on my Husband's Cousin Ryan and Wife for dinner only to realize like fifteen minutes before they were due to arrive that I was a month early.  Ooops trial run on the dinner, My sister Brenda, her daughter Emily and my friend Lara were only too happy to come over and eat the extra food I had prepared.  I made a vegetarian dinner due to expecting a vegetarian for dinner.  All I heard all week was, "Can't we have a side of steaks?" From my Husband being a Meatavore.  The lasagne had a great garlic and mushroom flavor complimented by the creamy Gorgonzola sauce.  To dye for... Yum!  Tim gobbled his up and had seconds, even with no meat.  I did not expect to like the roasted tomatoes as much as I did, they were juicy full of a rich tomato and herb flavor.  I had steamed asparagus as a side.  Next time I will put the herbs on after they come out of the broiler as they turned black but did not taste burned.
