Chicken & Brocolli Alfredo


Chicken Brocolli Alfredo, need I say more? Creamy sauce, pasta how can one go wrong? You just can't. Tonight I made my version of it and I have to say it was the best I have ever had. I added lots of garlic and grated onions yum! That is what everyone kept saying too while they ate, yum and mmmmm.

2 tbsp butter
1 pd of chicken cubed
1 sm onion grated
1 garlic clove chopped
1 large head of brocolli cut in small flowerettes
1 C heavy cream
1/2 C parmesan cheese
1/2 C white wine (pinot grigio)
fettucine or pasta of choice

Melt 2 tbsp of butter saute onion, garlic, salt, pepper and chicken till the chicken is no longer pink. Add white wine and deglaze pan reduce wine by a third to cook alcohol out. add the cream and bring to a light boil. Add cheese and simmer on low.

Bring salted water to a boil and cook pasta as directed. Use a steamer to cook broccoli. Add 1/2 C of pasta water and drain pasta. Add broccoli and pasta and stir. Salt and pepper to taste.
